Quicksmart Lemon Cake

This is by far, the best lemon cake I have ever tasted, if I do say so myself!

The flour that I use is Doves Gluten and Wheat Free, self raising flour mix which is amazing! It works just like it contains the gluten but obviously without!



Ingredients:
125g Doves Farm Self Raising Flour
125g Caster Sugar
100g Margarine
2 Eggs
1 tbsp Lemon Zest
2 tbsp Lemon Juice
1 tbsp Lemon Curd
1 tbsp Poppy Seeds

Method:

Preheat oven to 190 degrees, 170 fan, gas mark 5.
Place all ingredients into a bowl and mix together until smooth.
Pour ingredients into a cake tin lined with greaseproof/baking paper.
Place into oven for 40-45 minutes.
Coat the top with lemon curd, around 2tbsp, and enjoy straight away or once cool.

I will be creating recipes for you to try including both savoury and sweet dishes which are gluten free.
I myself am wheat intolerant and my boyfriend is gluten intolerant. This made me wonder how many people can't eat gluten... apparently there's quite a few of us! So let's get cooking the foods that we can eat.
Trust me, they taste spectacular.

This blog has been created as my project 365, whereby I will be posting recipe's and not photographs. Although I will aim to provide you photos! Also I will post 365 recipes this year, but I might cheat and give you a few at a time...
